Paleo Granola aka “Granoleo”

Full disclosure: My husband came up with this recipe – and I can’t stop eating it.

A few months ago, he jumped on the Paleo bandwagon. Since then, he’s been desperately searching for Paleo snacks to eat.

How desperate? Desperate enough to wander into the kitchen and come up with his own Paleo snack. 🙂

The result? Amazingly scrumptious Paleo granola, a.k.a. Granoleo.

How to make Granoleo
The method is super simple and similar to many granola recipes.

1. Combine the coconut, almonds, pepitas, walnuts, sunflower, and sesame seeds in a large stainless steel bowl.

2. In a small pot over medium heat, warm the honey, olive oil, salt, and cinnamon. Stir to combine.

3. Pour over the coconut mixture and stir until all the ingredients are coated with the honey mixture.

4. Transfer the granoleo to a foil-lined half sheet tray. Spread out evenly.

5. Bake in a 300 degree oven for 20 minutes. Stir the mixture, and bake for 10 minutes more.

6. Once the granola is completely cool, store in an airtight container.

We enjoy Granoleo with almond milk, over yogurt, or as is.

Ingredients

  • 3 cups coconut unsweetened shredded
  • cups raw almonds small pieces
  • 1 cup raw pepitas lightly chopped
  • ½ cup raw walnuts small pieces
  • ½ cup raw sunflower seeds
  • ½ cup raw esame seeds
  • ½ cup honey
  • 2 tablespoons olive oil
  • ¾ teaspoons salt
  • 1 teaspoon cinnamon ground

Directions

  • Preheat oven to 300 degrees. Line a half sheet tray with foil. Lightly coat the foil with pan spray.
  • Combine the coconut, almonds, pepitas, walnuts, sunflower, and sesame seeds in a large stainless steel bowl. Set aside.
  • In a small pot over medium heat, warm the honey, olive oil, salt, and cinnamon. Stir to combine.
  • Pour over the coconut mixture and stir until all the ingredients are coated with the honey mixture.
  • Transfer the granoleo to the prepared half sheet tray. Spread out evenly.
  • Bake 20 minutes. Stir granoleo. Bake 15 minutes more. Stir once more, and continue baking until golden brown, about 5 minutes more. Cool completely before storing in an airtight container at room temperature.
